Ingredients

  • 1 cup minute rice
  • 1 can of fat-reduced cream of mushroom soup
  • 1 can of fat-reduced cream of celery soup
  • 1 cup water
  • 1 cup chopped leftover turkey
  • 1 cup grated carrots
  • ¼ cup green onions
  • 1 tsp. salt
  • 1 tsp. black pepper
  • ½ cup chow mein noodles

Directions

  • Preset oven for 350°F.
  • Prepare rice according to package directions.
  • Combine soup and water, and bring to a boil. Once boiling, add turkey.
  • Once rice is ready, add it to the pot. Cook on a low setting for 10 to 15 minutes.
  • Pour mixture into casserole dish, and add carrots, green onions, salt, and pepper.
  • Bake 30 minutes.
  • Remove casserole from oven and sprinkle with chow mein noodles.
  • Cook 10 more minutes.
