Ingredients

  • ½ cup olive oil
  • ½ cup packed brown sugar
  • ½ cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 2 cups quick-cooking oats
  • ¼ cup slivered almonds
  • ½ tsp. baking powder
  • 1 tsp. ground cinnamon
  • Non-stick spray

Directions

  • Preheat oven to 325°F.
  • In a medium-sized mixing bowl, combine olive oil, sugar, applesauce, and vanilla. Add oats, slivered almonds, baking powder, and cinnamon, and mix until well-combined.
  • Spray a 9″square baking pan with cooking spray.
  • Bake for 20 to 25 minutes, or until inside is cooked through and edges are browned. It’s ready when a toothpick inserted into the center comes out clean.
  • Remove from oven and cut into squares.
