Ingredients
- 2 cups chicken, cooked and shredded
- 1/2 cup low-fat cheddar cheese
- 1 avocado, mashed
- 2 tbsp. cilantro, chopped
- 4 large whole wheat tortillas
- 1 tbsp. oil
- 1/2 cup onion
- 1/2 cup lettuce
- 1/2 cup corn
Directions
- Mix the shredded chicken, cheese, cilantro, mashed avocado, onions, lettuce and corn.
- Lay a tortilla flat on a plate, add a quarter of the mixture and form a roll. Repeat the process for all the tortillas.
- Pour oil into a heated pan or griddle. Place all four tortillas on the pan and cook for 2 minutes on medium-high heat. Flip on the other side and cook for another minute or until the burritos are golden in color. Serve warm.
