Ingredients

  • 2 cups chicken, cooked and shredded
  • 1/2 cup low-fat cheddar cheese
  • 1 avocado, mashed
  • 2 tbsp. cilantro, chopped
  • 4 large whole wheat tortillas
  • 1 tbsp. oil
  • 1/2 cup onion
  • 1/2 cup lettuce
  • 1/2 cup corn

Directions

  1. Mix the shredded chicken, cheese, cilantro, mashed avocado, onions, lettuce and corn.
  2. Lay a tortilla flat on a plate, add a quarter of the mixture and form a roll. Repeat the process for all the tortillas.
  3. Pour oil into a heated pan or griddle. Place all four tortillas on the pan and cook for 2 minutes on medium-high heat. Flip on the other side and cook for another minute or until the burritos are golden in color. Serve warm.
