
Ingredients
- 1 cup couscous (cooked as per the package)
- 2 green onions
- 1 cup yellow pepper
- ½ cucumber
- ¼ cup feta cheese, cubed
- 2 tbsp. pesto
- 2 tbsp. toasted pine nuts or almonds
- 3 tbsp. fresh lemon juice
Directions
- Slice the onions and pepper and dice the cucumber.
- Add chopped items to the couscous.
- Stir in pesto and crumble in feta.
- Sprinkle pine nuts on top to serve.
