Orange Ginger Carrots

Ingredients
- 1 package peeled baby carrots
- 2 tbsp. orange juice
- 1 tbsp. honey
- ½ tsp. grated fresh ginger
- 1 tbsp. snipped parsley
Directions
- In a large saucepan, cook the carrots, covered, in a small amount of boiling water for 3 to 5 minutes or until crisp-tender. Drain well.
- Meanwhile, in a small bowl, stir together the orange juice, honey and ginger. Drizzle over warm carrots. Toss to coat. To serve, sprinkle with parsley.

Chili Beans

Ingredients
- 1 1/2 lbs. green beans, trimmed
- 1 tbsp. light olive oil
- 2 tsp. chili garlic sauce (you can find this sauce at your local grocer)
- 1 tbsp. fresh lime juice
- Pepper to taste
Directions
- Preheat oven to 425°F.
- Place the green beans in a large bowl. Toss them with the olive oil and chili garlic sauce.
- Transfer the beans to a baking sheet and roast for 10 minutes, stirring halfway through.
- Stir in the lime juice and season with pepper.
