Ingredients

  • 4 boneless, skinless 6 oz. chicken breasts
  • 1 box of store-bought stuffing mix
  • 4 egg whites
  • 1 oz. pine nuts
  • ½ cup spinach (fresh or frozen), finely chopped
  • 1 can of low-fat cream of chicken soup
  • 1 can of water (use soup can)
  • 1 green onion, chopped

Directions

  • Preheat oven to 350°F.
  • Wash chicken breasts under cold water.
  • Prepare stuffing according to directions on box and add egg whites, pine nuts, and spinach.
  • Place chicken breasts on clean countertop or board. Place 1 tablespoon of stuffing on top of chicken. Roll the breast up and place in a square baking dish.
  • Mix soup with water and pour over chicken. Sprinkle with green onions.
  • Bake in oven for 25 to 30 minutes.
