Ingredients
- 4 boneless, skinless 6 oz. chicken breasts
- 1 box of store-bought stuffing mix
- 4 egg whites
- 1 oz. pine nuts
- ½ cup spinach (fresh or frozen), finely chopped
- 1 can of low-fat cream of chicken soup
- 1 can of water (use soup can)
- 1 green onion, chopped
Directions
- Preheat oven to 350°F.
- Wash chicken breasts under cold water.
- Prepare stuffing according to directions on box and add egg whites, pine nuts, and spinach.
- Place chicken breasts on clean countertop or board. Place 1 tablespoon of stuffing on top of chicken. Roll the breast up and place in a square baking dish.
- Mix soup with water and pour over chicken. Sprinkle with green onions.
- Bake in oven for 25 to 30 minutes.
