Ingredients: Salmon

  • 2 – 6 oz. salmon
  • ¼ tsp. pepper
  • 1 tsp. lemon juice

Ingredients: Red Pepper Salsa

  • 1 cup chopped red peppers
  • 2 medium celery stalks, diced
  • ¼ cup minced red onion
  • 1 minced pickled jalapeño chili
  • ½ cup chopped green onions
  • 1 tbsp. fresh lemon juice
  • ½ tsp. sugar
  • ¼ tsp. salt
  • 3 lemon wedges

Directions

  • Rinse salmon with cold water prior to preparation.
  • Prepare salmon by grilling in a skillet over low heat. Mix in pepper and lemon juice.
  • Prepare red pepper salsa in a small bowl. Combine all salsa ingredients; stir until well blended. Makes about 2 cups salsa.
  • Top salmon with salsa and lemon slices.
