Ingredients: Salmon
- 2 – 6 oz. salmon
- ¼ tsp. pepper
- 1 tsp. lemon juice
Ingredients: Red Pepper Salsa
- 1 cup chopped red peppers
- 2 medium celery stalks, diced
- ¼ cup minced red onion
- 1 minced pickled jalapeño chili
- ½ cup chopped green onions
- 1 tbsp. fresh lemon juice
- ½ tsp. sugar
- ¼ tsp. salt
- 3 lemon wedges
Directions
- Rinse salmon with cold water prior to preparation.
- Prepare salmon by grilling in a skillet over low heat. Mix in pepper and lemon juice.
- Prepare red pepper salsa in a small bowl. Combine all salsa ingredients; stir until well blended. Makes about 2 cups salsa.
- Top salmon with salsa and lemon slices.
