Ingredients

  • 1 green pepper
  • 1 1/2 cups grape tomatoes
  • 1 long English cucumber
  • 1/2 small red onion
  • 1/3 cup feta cheese, crumbled (I use reduced-fat feta)
  • 1/4 cup Kalamata olives

Dressing

  • 2 tbsp. red wine vinegar
  • 2 tsp. olive oil
  • 1 tsp. Greek oregano
  • Salt and pepper to taste
  • 1 garlic clove, minced

Directions

  • Wash and chop the green pepper and cucumber into bite-sized pieces and add them to a large bowl. Slice the red onion and add that too, along with the grape tomatoes.
  • In a small bowl, add the red wine vinegar, olive oil, oregano, garlic, and salt and pepper. Whisk together.
  • Pour the red wine vinegar mixture over the vegetables in the large bowl. Add the crumbled feta cheese and toss to combine. Sprinkle the Kalamata olives over the top and you’re done!
