Ingredients

  • 1 cup couscous (cooked as per the package)
  • 2 green onions
  • 1 cup yellow pepper
  • ½ cucumber
  • ¼ cup feta cheese, cubed
  • 2 tbsp. pesto
  • 2 tbsp. toasted pine nuts or almonds
  • 3 tbsp. fresh lemon juice

Directions

  • Slice the onions and pepper and dice the cucumber.
  • Add chopped items to the couscous.
  • Stir in pesto and crumble in feta.
  • Sprinkle pine nuts on top to serve.
